It's all in the title. A no bake, easy to make cookie flavored cheesecake; need I say more? This one is a crowd pleaser y'all.
Ingredients:
1 8oz packet of cream cheese, room temp
1/2 8oz tub of whipping cream
1 small tub of mascarpone cheese
Half a tub of biscoff/lotus cookie butter
1 and a half packets of Lotus cookies
2-3 tbsp sugar
1 tsp vanilla
1/3 cup of melted butter
Method:
Blitz the cookies (leave a few for decoration) in a food processor until it reaches the consistency of sand. Add the melted butter and pack it tightly in a spring form pan. This will create the cheesecake crust.
In a large bowl using a hand mixer, mix the cream cheese and mascarpone cheese until soft, add the cookie butter, sugar and vanilla and mix for a couple of minutes. Add the cold whipping cream and mix until well incorporated (you can add a little more until it reaches the concistency you desire, keep in mind this won't bake and will need to be thick enough to stay up and not collapse).
Pour this mix on top of the crust and refrigerate for a few hours. Use extra blitzed cookies and full cookies to decorate.
Tip:
Heat a little cookie butter in the microwave and drizzle over the cheesecake to decorate
