Balsamic Berry Pots

A decadent, rich and fruity dessert that's so easy to make yet so impressive. I love making this for friends when they come over for dinner, it's a simple recipe and doesn't require any cooking or baking. I can prepare all the steps before hand and simply put them together when it's time to indulge.





Ingredients

1 pack strawberries

1 pack blueberries

1 pack raspberries or blackberries

1 16 oz tub of whipping cream

1 8 oz tub of mascarpone cheese

Zest of 1 lemon

2 tsp balsamic vinegar

2-3 tbsp powdered sugar

2 tbsp granulated sugar

1 tsp vanilla


Method

First, wash your berries well and chop the strawberries into small/bitesize pieces. Rest of the berries don't need to be chopped


Mix all your berries in a large mixing bowl, add the zest of half a lemon, the granulated sugar, and the balsamic vinegar. Mix all well and leave in the fridge to macerate. You'll notice after an hour or so, your berries will be juicy and a simple syrupy sauce will form.


Whip the cream with a stand or hand mixer, add the rest of the zest, the powdered sugar and the vanilla. Whisk until peaks form then add the mascarpone a tbsp at a time.


Once ready, make your little pots by alternating cream and berries.


Tips:

  1. Use any berries you want, you don't have to stick what I use

  2. Make sure your cream is very cold before whisking

  3. Take your mascarpone out the fridge an hour before whisking so it softens

  4. You can use more of less sugar in the berries and in the cream, it all depends on your tastes

  5. Most importantly, don't be afraid of using the vinegar, trust me you won't taste anything vinegary in the berries, the vinegar simply gets all the yummy juices out
